Turkey Chili Mac

Two comfort foods in one — chili and mac and cheese in a single pot.

Ingredients

  • 4 oz lean ground turkey
  • 1.5 oz whole wheat macaroni (dry)
  • 1/2 cup black beans, rinsed
  • 1/2 cup diced tomatoes
  • 1/4 cup chicken broth
  • 2 tbsp tomato paste
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1 tbsp shredded cheddar

Instructions

  1. Brown turkey in a skillet.
  2. Add chili powder and cumin. Stir 30 seconds.
  3. Add tomatoes, broth, paste, and beans. Simmer.
  4. Add dry macaroni. Cover and simmer 12-15 minutes.
  5. Top with cheddar and cover 1 minute.
