Ingredients

  • 12 oz ground turkey (93% lean)
  • 1 cup canned black beans, rinsed and drained
  • 14.5 oz diced tomatoes (undrained)
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 cup low-sodium chicken broth

Instructions

  1. Turn the Instant Pot to Sauté and brown the ground turkey for 4-5 minutes, breaking it up.
  2. Add the onion, bell pepper, and garlic and sauté 3 minutes until softened.
  3. Stir in the chili powder and cumin and toast for 30 seconds.
  4. Add the black beans, diced tomatoes, and broth, scraping the bottom to deglaze.
  5. Lock the lid, set the valve to Sealing, and pressure cook on High for 10 minutes.
  6. Quick-release the pressure carefully, remove the lid, and stir well.
  7. Season with salt and pepper to taste and serve hot.
