Beef and Broccoli Stir-Fry

A healthier version of the takeout classic. Using lean beef and loading up on broccoli means you get all the flavor with a fraction of the calories. Ready in 20 minutes!

Ingredients

  • 120g lean beef, sliced thin
  • 1½ cups broccoli florets
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp olive oil

Instructions

  1. Marinate beef in 1 tbsp soy sauce for 10 minutes.

  2. Heat oil in a wok over high heat. Add beef and stir-fry 2-3 minutes until browned. Remove.

  3. Add garlic and ginger to the wok, stir 30 seconds.

  4. Add broccoli and stir-fry 3-4 minutes until tender-crisp.

  5. Return beef to wok, add remaining soy sauce, toss 1 minute.

  6. Serve hot on its own or over cauliflower rice.
