Baked Apples with Cinnamon

All the flavor of apple pie without the butter-laden crust. Baking concentrates the apple’s natural sweetness while cinnamon adds warmth and helps regulate blood sugar.

Ingredients

  • 2 large apples (Honeycrisp or Granny Smith)
  • 2 tbsp chopped walnuts
  • 1 tsp ground cinnamon
  • 1 tbsp honey or maple syrup
  • 1 tbsp raisins
  • 2 tbsp water

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Core apples from the top, leaving the bottom intact. Place in a baking dish.

  3. Mix walnuts, cinnamon, honey, and raisins in a small bowl.

  4. Stuff the mixture into the cored apples.

  5. Pour 2 tbsp water into the bottom of the baking dish.

  6. Bake for 25 minutes until apples are tender but not collapsing.

  7. Serve warm, optionally with a dollop of Greek yogurt.
