Vegan Overnight Oats
A no-cook, prep-ahead breakfast of creamy rolled oats soaked in almond milk with chia seeds and banana. It thickens overnight into a satisfying, fiber-rich morning meal you can grab and go.
Ingredients
- 1/2 cup rolled oats
- 3/4 cup unsweetened almond milk
- 1 tbsp chia seeds
- 1/2 banana, sliced
- 1 tsp maple syrup
- 1 tbsp sliced almonds
- 1/2 tsp ground cinnamon
- 1/2 tsp vanilla extract
- 1/4 cup mixed berries (optional)
Instructions
- Combine oats, almond milk, and chia seeds in a jar or container. Stir well.
- Add maple syrup, cinnamon, and vanilla extract. Stir again until evenly mixed.
- Fold in half the banana slices, reserving the rest for topping.
- Cover and refrigerate overnight, or at least 6 hours, until thick and creamy.
- Stir the oats in the morning, adding a splash of almond milk if too thick.
- Top with remaining banana, sliced almonds, and berries. Serve cold.
