Salmon with Sweet Potato

A nutrient-dense dinner with omega-3-rich salmon, fiber-packed sweet potato, and crisp green beans.

Ingredients

  • 5 oz salmon fillet
  • 1 medium sweet potato, cubed
  • 1 cup green beans, trimmed
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper
  • Lemon wedges

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato with 1/2 tbsp olive oil, garlic powder, salt, and pepper.
  3. Roast for 15 minutes.
  4. Season salmon with paprika, salt, and pepper. Add to baking sheet.
  5. Add green beans with remaining oil.
  6. Bake 12-15 minutes until salmon is cooked through.
  7. Serve with lemon wedges.
