Salmon with Sweet Potato
A nutrient-dense dinner with omega-3-rich salmon, fiber-packed sweet potato, and crisp green beans.
Ingredients
- 5 oz salmon fillet
- 1 medium sweet potato, cubed
- 1 cup green beans, trimmed
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper
- Lemon wedges
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potato with 1/2 tbsp olive oil, garlic powder, salt, and pepper.
- Roast for 15 minutes.
- Season salmon with paprika, salt, and pepper. Add to baking sheet.
- Add green beans with remaining oil.
- Bake 12-15 minutes until salmon is cooked through.
