One-Pot Pasta Primavera
This one-pot pasta primavera lets the noodles cook right in vegetable broth with a rainbow of vegetables, creating its own light sauce with no separate pot to wash. It is a fresh vegetarian dinner ready in under 30 minutes.
Ingredients
- 8 oz whole wheat penne pasta
- 3 cups low-sodium vegetable broth
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 carrot, diced
- 1/2 cup frozen peas
- 3 cloves garlic, minced
- 3 tbsp grated Parmesan cheese
- 1 tbsp olive oil
- 2 tbsp fresh basil, chopped
Instructions
- Heat the olive oil in a large pot or deep skillet over medium heat.
- Add the garlic, zucchini, bell pepper, and carrot and sauté 3 minutes.
- Add the dry pasta, broth, and a pinch of salt; stir well to combine.
- Bring to a boil, then reduce to a vigorous simmer.
- Cover and cook 12-14 minutes, stirring every few minutes, until the pasta is al dente and liquid mostly absorbs.
- Stir in the peas during the last 2 minutes to warm through.
- Remove from heat, fold in the Parmesan and basil, and serve immediately.
