Paleo Shrimp Skewers

Garlic-lemon marinated shrimp threaded with colorful vegetables and grilled to perfection. Light, protein-packed, and naturally paleo, these skewers are a quick dinner or meal-prep winner.

Ingredients

  • 6 oz large shrimp, peeled and deveined
  • 1/2 cup bell pepper chunks
  • 1/2 cup zucchini chunks
  • 1/4 cup red onion chunks
  • 1/2 lemon, juiced
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt and pepper

Instructions

  1. Whisk lemon juice, olive oil, garlic, oregano, salt, and pepper in a bowl.
  2. Add shrimp to the marinade and toss to coat. Refrigerate 10 minutes.
  3. Soak wooden skewers in water for 10 minutes if using (to prevent burning).
  4. Thread shrimp and vegetables onto skewers, alternating for color.
  5. Preheat a grill or grill pan over medium-high heat.
  6. Grill skewers 2-3 minutes per side until shrimp are pink and opaque.
