Low Calorie Deviled Eggs

Swapping the mayo for Greek yogurt keeps every bit of the creamy, tangy goodness while adding protein and dropping each egg to just 50 calories. Ingredients
- 12 large eggs
- 1/4 cup plain Greek yogurt (0% fat)
- 2 tbsp Dijon mustard
- 1/2 lemon, juiced (about 1.5 tablespoons)
- 1 tsp apple cider vinegar
- 1/2 tsp garlic powder
- 1 tsp paprika (plus extra for garnish)
- Salt and pepper to taste
- Fresh chives or dill for garnish
Instructions

Boil the eggs: place them in a single layer in a pot, cover with cold water, and bring to a boil. Cover, remove from heat, and let stand 12 minutes. Transfer to an ice bath to cool.

Peel the eggs carefully, slice each in half lengthwise, and gently pop the yolks into a bowl.

Mash the yolks with a fork, then add the Greek yogurt, Dijon, lemon juice, vinegar, garlic powder, paprika, salt, and pepper. Mix until very smooth.

Pipe or spoon the yolk mixture back into the egg white halves.

Garnish with a sprinkle of paprika and a few snipped chives or dill. Chill until serving.
