Chicken Quesadilla
A satisfying quesadilla loaded with protein. Using two medium tortillas instead of one large one controls portions.
Ingredients
- 4 oz chicken breast, cooked and shredded
- 2 medium flour tortillas (8 inch)
- 1/3 cup shredded reduced-fat cheddar
- 1/4 bell pepper, diced
- 2 tbsp diced onion
- 1 tbsp salsa
- Cooking spray
Instructions
- Season chicken with cumin and chili powder. Cook and shred.
- Saute bell pepper and onion for 3 minutes.
- Spray a skillet and place over medium heat.
- Place one tortilla in the skillet. Add cheese, chicken, vegetables, and remaining cheese.
- Top with second tortilla. Cook 2-3 minutes until golden.
- Flip and cook 2 more minutes until crispy.
- Cut into wedges and serve with salsa.
