Ingredients
- 5 oz chicken breast, cooked and shredded
- 3 corn tortillas
- 1/2 cup red enchilada sauce (low sodium)
- 1/4 cup shredded reduced-fat cheddar
- 2 tbsp diced onion
- 1/4 cup black beans
- 1 tbsp Greek yogurt
- 1 tbsp chopped cilantro
Instructions
- Preheat oven to 375°F (190°C).
- Mix chicken with onion, black beans, and 2 tbsp enchilada sauce.
- Warm tortillas for 20 seconds.
- Fill each tortilla and roll up. Place seam-side down in a baking dish.
- Pour remaining sauce over top. Sprinkle with cheese.
- Bake 15-20 minutes until bubbly.
- Garnish with yogurt and cilantro.
