Ingredients

Instructions
- Cook egg noodles according to package directions; drain and keep warm.
- Toss the beef strips with flour, salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium-high heat and sear the beef 2-3 minutes until browned; remove and set aside.
- Melt butter in the same skillet and saute onion and mushrooms 6-8 minutes until golden and liquid evaporates.
- Add garlic and tomato paste; cook 1 minute.
- Pour in beef broth and Dijon mustard, scraping up any browned bits, and simmer 3 minutes until slightly thickened.
- Remove from heat and stir in sour cream until smooth.
- Return the beef to the skillet to warm through, then serve over the egg noodles, garnished with parsley.
