Baked Samosa
All the crispy, spiced goodness of a samosa without the deep frying. A golden potato-and-pea filling seasoned with toasted cumin and garam masala gets wrapped in a light whole wheat tortilla and baked until crisp.
Ingredients
- 1 medium potato, diced
- 1/4 cup green peas
- 1/2 medium onion, finely diced
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 tsp garam masala
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 2 small whole wheat tortillas
- 1 tbsp olive oil
- Salt to taste
- Lemon and cilantro to serve
Instructions
- Boil or microwave the diced potato until tender, then drain.
- Heat half the olive oil in a pan and toast cumin seeds 30 seconds.
- Add onion and cook 4 minutes until softened.
- Stir in garlic, ginger, turmeric, and garam masala and cook 1 minute.
- Add potato and peas, mash lightly, and season with salt. Cool slightly.
- Cut each tortilla in half and fold into cones, filling with the potato mixture. Seal edges with water.
- Brush samosas with remaining olive oil and place on a baking sheet.
- Bake at 400F (200C) for 15-18 minutes, flipping once, until golden and crisp. Serve with lemon.
