Low-Cal Aloo Gobi

A classic dry curry of potatoes and cauliflower tossed with turmeric, cumin, and coriander. This vegan version uses just a touch of oil and lets the vegetables’ natural flavors shine.

Ingredients

  • 1 medium potato, diced small
  • 2 cups cauliflower florets
  • 1/2 medium onion, sliced
  • 1 medium tomato, chopped
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp turmeric
  • 1 tsp cumin seeds
  • 1 tsp ground coriander
  • 1 tsp olive oil
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh cilantro to garnish

Instructions

  1. Parboil the diced potato 3-4 minutes, then drain.
  2. Heat olive oil in a pan and toast cumin seeds 30 seconds.
  3. Add onion and cook 3-4 minutes until softened.
  4. Stir in garlic and ginger and cook 1 minute.
  5. Add turmeric and coriander and toast 30 seconds.
  6. Add potato and cauliflower with a splash of water, cover, and cook 8-10 minutes until tender, stirring occasionally.
