Whole Wheat Naan

Soft, pillowy naan made with whole wheat flour and a touch of yogurt for tenderness, cooked right in a skillet. A healthier companion to any curry, with far less fat than restaurant naan.

Ingredients

  • 1 cup whole wheat flour
  • 1/4 cup plain Greek yogurt
  • 1 tsp olive oil
  • 1 clove garlic, minced
  • 1 tsp baking powder
  • 1/2 tsp honey
  • 2-3 tbsp unsweetened almond milk (as needed)
  • 1 tbsp fresh cilantro, chopped
  • Salt to taste
  • 1 tsp olive oil for brushing

Instructions

  1. Mix flour, baking powder, and salt in a bowl.
  2. Add yogurt, olive oil, honey, and minced garlic, then stir to combine.
  3. Knead in almond milk a tablespoon at a time until a soft dough forms.
  4. Cover and rest the dough 45-60 minutes at room temperature.
  5. Divide into 2 balls and roll each into an oval about 1/4 inch thick.
  6. Heat a dry skillet over medium-high heat until very hot.
  7. Cook each naan 1-2 minutes per side until puffed and charred in spots.
  8. Brush with a little olive oil and sprinkle with cilantro before serving.

Tips

  • A hot skillet is essential for the characteristic bubbles and char.
  • Resting the dough relaxes the gluten so the naan puffs up.
  • Keep cooked naan wrapped in a towel to stay soft and warm.
