Ingredients
- 6 oz firm tofu, drained and crumbled
- 1 cup baby spinach
- 1/4 cup diced yellow onion
- 1/4 cup diced bell pepper
- 1 clove garlic, minced

- 1 tbsp nutritional yeast
- 1/4 tsp ground turmeric
- 1 tsp soy sauce (low sodium)

Instructions
- Press the tofu lightly to remove excess water, then crumble it into bite-sized pieces with your hands.
- Heat olive oil in a nonstick skillet over medium heat.
- Sauté onion, bell pepper, and garlic for 3 minutes until softened.
