Kimchi Stew
A fiery Korean kimchi jjigae built on well-fermented kimchi, lean pork, and soft tofu. The sour-spicy broth is deeply comforting and surprisingly light.
Ingredients
- 1.5 cups aged kimchi, chopped
- 4 oz pork loin, sliced thin
- 4 oz firm tofu, cubed
- 1/2 cup onion, sliced
- 2 cloves garlic, minced
- 1 tbsp gochugaru (Korean chili flakes)
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 2 cups water
- 2 tbsp scallions, sliced
Instructions
- Saute the onion and pork in sesame oil in a pot for 3 minutes.
- Add the chopped kimchi and garlic and cook for 4 minutes until fragrant.
- Stir in the gochugaru and soy sauce.
- Pour in the water and bring to a boil, then reduce to a simmer.
- Simmer for 15 minutes so the broth develops depth.
- Add the tofu cubes and warm through for 3 minutes.
- Ladle into bowls and top with scallions.
