Decadently fudgy brownies hiding a secret: black beans for moisture and protein. You’d never guess they’re vegan, gluten-free, and naturally sweetened with maple syrup.

Ingredients

  • 3/4 cup cooked black beans (rinsed and drained well)
  • 3 tbsp unsweetened cocoa powder
  • 3 tbsp maple syrup
  • 3 tbsp rolled oats
  • 1 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp vegan dark chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F and line a small baking pan (6x6) with parchment.
  2. Add black beans, cocoa, maple syrup, oats, coconut oil, vanilla, baking powder, and salt to a food processor.
  3. Blend until completely smooth, scraping down the sides once.
  4. Fold in chocolate chips if using.
  5. Spread the batter evenly into the prepared pan.
  6. Bake for 22-25 minutes until the top is set and a toothpick comes out mostly clean.
  7. Cool completely before cutting into 4 squares - they firm up as they cool.
