Light Tteokbokki
A slimmed-down version of Korea’s beloved spicy rice cake street snack, simmered in a lighter gochujang sauce with napa cabbage. It keeps the signature chew and kick without the heavy oil.
Ingredients
- 6 oz Korean rice cakes (tteok)
- 2 tbsp gochujang
- 1 tsp gochugaru
- 1 tbsp soy sauce
- 1 tbsp sugar
- 2 cloves garlic, minced
- 1 cup napa cabbage, chopped
- 2 tbsp scallions, sliced
- 1 tsp sesame seeds
- 1.5 cups water
Instructions
- Soak the rice cakes in warm water for 10 minutes if they are hard.
- Combine the gochujang, gochugaru, soy sauce, sugar, and garlic in a small bowl.
- Bring the water to a simmer in a skillet and whisk in the sauce mixture.
- Add the rice cakes and cook, stirring often, for 8 minutes until tender and the sauce thickens.
- Stir in the napa cabbage for the last 2 minutes.
- Finish with scallions and sesame seeds.
