Ingredients

  • 2 oz thin rice vermicelli
  • 4 oz shrimp, peeled
  • 1 egg, beaten
  • 1 oz red bell pepper, julienned
  • 1 oz onion, sliced
  • 0.5 cup bean sprouts
  • 1 tbsp Madras curry powder
  • 1 tbsp light soy sauce
  • 1 scallion, sliced

Instructions

  1. Soak the rice noodles in warm water 8 minutes until pliable; drain well.
  2. Toss the drained noodles with curry powder to coat evenly.
  3. Scramble the egg in a hot wok with a little oil; set aside.
  4. Stir-fry shrimp, bell pepper, and onion 2-3 minutes until shrimp is pink.
  5. Add the curry-coated noodles and toss over high heat 2 minutes.
  6. Return the egg to the wok with bean sprouts and soy sauce; toss to combine.
