Low-Cal Rasmalai
A lighter rasmalai made by pressing cottage cheese into soft discs and soaking them in fragrant cardamom-saffron milk sweetened with honey instead of sugar. Delicate, creamy, and surprisingly protein-rich for a dessert.
Ingredients
- 1/2 cup low-fat cottage cheese
- 1 cup low-fat milk
- 1/2 tsp ground cardamom
- 2 tbsp honey
- 1 tbsp sliced almonds
- A pinch of saffron threads
- 1 tsp cornstarch
- 1 tsp lemon juice
- Chopped pistachios to garnish
Instructions
- Blend the cottage cheese with lemon juice until very smooth, then press into a disc wrapped in cheesecloth to remove moisture.
- Shape the cheese into 2-3 small flat patties and chill 15 minutes to firm up.
- Warm the milk in a saucepan and steep saffron and cardamom in it 5 minutes.
- Whisk cornstarch with a tablespoon of cold milk, then stir into the warm milk to thicken slightly.
- Stir in honey until dissolved and simmer 3-4 minutes until the milk coats the spoon.
- Gently add the cheese patties to the warm milk and simmer 2 minutes.
- Remove from heat and chill at least 30 minutes so the discs absorb the flavors.
- Garnish with sliced almonds and pistachios before serving.
