Greek Tzatziki Chicken

Ingredients
- 8 oz boneless skinless chicken breast
- 1/4 cup plain Greek yogurt (for marinade)
- 1/4 cup plain Greek yogurt (for tzatziki)
- 1/2 medium cucumber, grated
- 2 cloves garlic, minced (divided)
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1 tbsp fresh dill, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Combine 1/4 cup yogurt, half the garlic, oregano, and lemon juice for a marinade.
- Coat chicken and refrigerate 30 minutes to 2 hours.
- Grate cucumber and squeeze out excess moisture with a towel.
- Mix remaining yogurt, cucumber, garlic, dill, and a pinch of salt to make tzatziki. Chill.
- Grill chicken over medium-high heat 5-6 minutes per side until 165 F.
- Rest 5 minutes, slice, and serve with a generous spoonful of tzatziki.
