Ingredients

  • 8 oz boneless skinless chicken breast
  • 1/4 cup plain Greek yogurt (for marinade)
  • 1/4 cup plain Greek yogurt (for tzatziki)
  • 1/2 medium cucumber, grated
  • 2 cloves garlic, minced (divided)
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tbsp fresh dill, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Combine 1/4 cup yogurt, half the garlic, oregano, and lemon juice for a marinade.
  2. Coat chicken and refrigerate 30 minutes to 2 hours.
  3. Grate cucumber and squeeze out excess moisture with a towel.
  4. Mix remaining yogurt, cucumber, garlic, dill, and a pinch of salt to make tzatziki. Chill.
  5. Grill chicken over medium-high heat 5-6 minutes per side until 165 F.
  6. Rest 5 minutes, slice, and serve with a generous spoonful of tzatziki.
