Ingredients

  • 1 cup chicken breast (1 whole breast, about 6 oz)
  • 1 sheet puff pastry (thawed)
  • 1 cup mushrooms (cremini), finely chopped
  • 1 slice prosciutto (optional)
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 shallot, finely chopped
  • 1 clove garlic, minced
  • 1 tsp fresh thyme leaves
  • 1 tsp Dijon mustard
  • 1 egg, beaten (for egg wash)

  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment.
  2. Season chicken breast with salt and pepper. Sear in olive oil over medium-high heat, about 2 minutes per side, just to brown. Brush with Dijon and let cool.
  3. Melt butter in a skillet and sauté shallot and garlic for 1 minute.
  4. Add chopped mushrooms and thyme and cook 6-8 minutes, stirring often, until all moisture evaporates and the mixture is a dry paste (duxelles). Let cool.
  5. Roll out puff pastry on a lightly floured surface. Lay prosciutto (if using) down the center, then spread the duxelles over it.
  6. Place the chicken on top and wrap the pastry around it, sealing the seams and tucking the ends. Transfer seam-side down to the baking sheet.
  7. Brush the pastry all over with beaten egg wash and cut 2 small slits to vent steam.
  8. Bake 20-25 minutes until the pastry is puffed and deep golden and the chicken reaches 165°F. Rest 5 minutes before slicing.
