Ingredients

  • 1/2 cup brown lentils
  • 1/2 cup white rice
  • 2 large onions, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp cinnamon
  • 3 cups water
  • 1 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Rinse lentils and place in a pot with 2 cups water. Simmer 20 minutes until just tender.
  2. Add rice, cumin, cinnamon, salt, and 1 cup water to the lentils. Cover and cook 18 minutes.
  3. Meanwhile, heat olive oil in a large skillet over medium-low heat.
  4. Cook sliced onions 15-20 minutes, stirring often, until deep golden and crispy.
  5. Fluff the lentil-rice mixture off the heat and let rest 5 minutes.
