Low-Cal Chicken Korma

A gentle, fragrant korma that skips heavy cream in favor of yogurt and a handful of ground almonds for natural richness. The result is a mild, silky curry perfumed with cardamom that’s perfect for a comforting dinner.

Ingredients

  • 6 oz chicken breast, cut into chunks
  • 1/3 cup plain Greek yogurt
  • 2 tbsp ground almonds (or almond flour)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp garam masala
  • 1 tsp ground coriander
  • 1/4 tsp ground cardamom
  • 1 tsp olive oil
  • 0.75 cup cooked brown rice
  • Salt to taste

Instructions

  1. Marinate chicken in half the yogurt, coriander, and a pinch of salt for 15 minutes.
  2. Heat olive oil in a pan and cook the onion 6-8 minutes until very soft and golden.
  3. Add garlic and ginger and cook 1 minute.
  4. Stir in garam masala and cardamom and toast 30 seconds.
  5. Add ground almonds and 1/4 cup water and stir into a smooth paste.
  6. Add marinated chicken and simmer 8-10 minutes until cooked through.
  7. Stir in the remaining yogurt off the heat to keep the sauce creamy.
  8. Serve over brown rice.
